He said that he wants to have the bid for all the cleaning and to include the chemicals i bring them and i take them with me nothing stay in the restaurant. Men i did everything but get the sq ft of the place but i can always call him and ask him. But i have everything else. I was so nervous for maybe being my first big account.

Its about 1,000 sq ft or alittle more it has alot of turn towards the bar and the dish washer. 3 Hoods( Grease traps clean, Hood polish inside and out) There are 18 floor mats that we need to pull out side and clean them There are 13 floor drains and to big floor drains that need to be clean Sweep floor behind the hot lines and pressure wash and then scrub the floors Wipe down walls if they need to and i can star at 1:00 am but be done before 5:00am

Grease Traps are what catch the grease from the waste water. They are maintained by pumping them out and by placing Enzyme-Digester Blocks in the trap to dissolve the grease. I think what you are calling grease traps are hood filters.
A typical maintenance schedule for a grease trap is Enzyme block every 1-3 months. Pump out as needed.
Nightly hood filter cleaning would only be necessary in a high volume restaurant. It sounds like this could be a high volume place. Hope this info helps.
